Peanut Butter Jelly and Overnight Oats
This is a perfect breakfast recipe for busy days. Prep the night before and its ready to grab and go in the morning. This is loaded with protein, omegas, antioxidants and collagen.

Ingredients
2/3 cup Gluten free oats
¼ cup chia seeds
2 tablespoons hemp seeds
2 tablespoons protein powder
1/12 cups plant based milk
1-2 tablespoons coconut nectar (to taste)
2 tablespoons coconut yoghurt
1 cup berries, defrosted
1 tablespoon coconut nectar
2 tablespoons chia seeds
1tablespoon EB Native collagen powder
2 tablespoons peanut butter
Overnight Oats
Collagen Berry Compote
To serve
Directions
For the overnight oats
Combine all ingredients in a bowl and stir till combined. Set aside whilst you prepare the compote.
For the berry compote
Mix all ingredients together in a bowl. Adjust sweetener to your taste as sometimes berries can be more sour.
To assemble
Smear a tablespoon of peanut butter in each jar. Distribute the overnight oats in the two jars. Top with the berry compote.Place in the refrigerator overnight. Enjoy the next morning.
